Routine inspection
- Hand washing stations are equipped with hot/ cold running water, liquid soap and paper towel. Proper hand washing and use of gloves by staff observed at the time of inspection.
- Ice machines and ice wells kept clean and ice scoops are stored in sanitary containers out of the ice wells.
- Proper sanitation and cleaning for frosty machine was discussed. Washing and sanitizing procedure are to be followed. Temperature at the machine measure below 4C.
Temperature control
- All under the counter coolers are at 4C or colder. Walk in cooler is at or below 4C. Walk-in freezer, located outside of the premises in a secured storage, measured at -18C or colder. Temperature monitoring log is maintained and up-to-date at this time. Temperature monitoring is to be conducted routinely to ensure all cooling equipment are in good working condition. Temperature of the food must be maintained at or below 4C. Do not rely only on equipment's monitor.
- Internal temperature of cooked hamburger patties/ fried chicken are measured with probe thermometer and logged.
- Hot holding units are at or above 60C. Cooked bacon is to be held at 60C or hotter.
General sanitation
- Floors are clean and free of food debris and grease even during the lunch rush. Well done!
- No obvious sign of pest observed at this date. Pest monitoring and management is through pest company.
- QUAT sanitizer @200 ppm concentration available. Proper Dishware washing process observed to be followed in three-compartment sink.
- Chemical is separated from food in storage. Dry storage is clean and food stored above the floor. Premises well lit.
- Garbage area observed to be clean.
- Dry storage outside observed clean. No food items stored at this storage.
- Customer washrooms are clean well maintained.
