Observation: Areas observed with food debris/filth accumulation causing unsanitary conditions:
1) Door handles for standing cooler, prep cooler, and walk-in cooler
2) Shelves and floor of walk-in cooler
3) Venthood for pizza oven - grease build up due for professional cleaning
Corrective Action(s): Please clean and sanitize these areas to restore sanitary conditions, and maintain regularly going forward.

Observation: Round pizza cutting board, sandwich maker (pizza toppings cooler) cutting board, and cutting board on trolley, all have mild mildew growth and are no longer smooth and easy to clean. This could provide pathogens harbourage.
Corrective Action(s): Please replace cutting boards. Food contact surfaces must be smooth, durable, non-toxic, and easy to clean.

- Chest freezer holds below -18 degrees Celsius
- No foods stored on ground; no signs of pest activity
- Dishwasher reaches over 71 degrees Celsius; 100ppm chlorine solution available for bar towel soak
- Foods are kept covered; good food organization and storage practices in walk-in cooler

Note: Premise had been broken into over night. Broken glass from incident in front cashier area only; clean up underway during inspection.
