Observation: Upper compartment of the ice machine has accumulation of mould and mildew-like deposits. Kitchen staffs started to discard ice and started cleaning procedure at this time.
Corrective Action(s): Clean and sanitize the ice machine in accordance with manufactuerer's direction.

Observation (CORRECTED DURING INSPECTION): A pail of bleach sanitizer measured at >200 ppm as per test strips. On site staff prepared a new bleach sanitizer that was measured at 200 ppm.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1. Hand washing station in the kitchen now equipped with blow air type dryer. This was newly added since last inspection. The facility is to revert back to single use paper towel for drying hands. Such type of hand dryer is not suitable for drying hands in a kitchen operation. A roll of paper towel now available at this hand washing station.
2. Banquet hall B bar's hand soap was missing at this time. The manager acquired liquid soap at this time.

Observation: Small number of fruit flies were observed throughout the facility including dishwashing area, inside dry storage cabinets, bar, etc.
Corrective Action(s): Implement Integrated Pest Management (IPM) approach which includes improving sanitation, removing pest attractants, installing fruit fly traps, and more. Schedule a visit with your pest control company and get an assessment in regards to fruit fly activities.
Correct this by: immediately.

Observation: Dried food debris and spilled sauces noted. Sanitation improvement required at the following areas:
- Cabinet doors and knobs alongside the wall
- Dry storage bins under the stainless steel work stations
- Metal drawers where clean utensils are stored
Corrective Action(s): General sanitation improvement is required in above noted areas.

Routine inspection conducted:
Walk in coolers measured at 4 degrees C.
Walk in freezer measured at -18 degrees C.
Low temperature dishwasher in use. 50 ppm chlorine detected at the plate level.
Ventilation canopy is in sanitary condition. Next cleaning schedule: Oct 29, 2021.
Bar areas in sanitary condition. Banquet hall A's bar station is adequately equipped with hot/cold running water, liquid soap and paper towels.
Pest control in place monthly.
Food covered and stored adequately.
Washrooms in satisfactory condition.

Note:
Follow up inspection scheduled for September 17, 2021.
Signature was not collected due to COVID 19. Report to be emailed to the facility.
No food handlers present at the time of inspection. Please acquire a copy of FoodSafe Level 1 or its equivalence for review for a follow up inspection.
Prepare recent pest inspection reports for review for a follow up inspection.
