Observation: 1. Two bags of flour were stored directly on the floor. Both bags were stored off the floor during inspection.
2. Thick ice build up observed in the white stand up freezer. A container of sliced cheese was stored directly underneath it and was found to be uncovered. Potential food contamination can occur if the pieces of ice fall into the food. Staff covered the container and stated that freezer will be defrosted to remove the ice build up.
Corrective Action(s): 1. Ensure that food is protected from contamination at all times.
- Always store food products at least 6 inches off the floor.
- Cover the food with lids or food grade wraps to prevent the risk of food contamination.
2. Remove the ice build up by October 15, 2022.

NOTE - Facility is offering take out services. Dine in services have been temporarily suspended and the area is being used for storing take out containers.

- Temperature of all the coolers recorded below 4C
Walk in coolers at 4C and 1C
Prep cooler at 2C
White cooler at 4C

- Stainless steel freezer at -15C
- White freezer near front service area at -18C
- Stand up freezer near back door at -7C
- Handwash station available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- Low temp mechanical dishwasher used for dishwashing. 50ppm chlorine residual noted during "2nd" rinse cycle.
- 2 compartment dishwashing sink present.
- Vent hood was maintained in good sanitary condition.
- Staff stated that the regular clean up is done. No signs of food debris/dirt build up observed behind cooking line. Good.
- In Operator's absence, staff has valid FOODSAFE Level 1 certificate (April 5, 2027).
- Operating permit posted in a conspicuous location.

Recommendations:
- Conduct routine checks of low temp mechanical dishwasher to ensure that it is functioning properly.
