Routine inspection - Hand washing stations supplied with hot/cold running water, liquid soap and paper towels in dispenser. - Make line cooler measured at or below 4C(40F). Walk in cooler measured at or below 4C. Food properly labeled, dated and covered. Walk in freezer measured at -18C(0F). Temperature monitoring log maintained. - Freezer next to fryer measured at -18C or colder. - 50-100 ppm Chlorine detected in the final rinse of dish washer and water temperature measured at 45C in wash cycle. Testing kit available. Implements stored on drying rack and observed to be handled in sanitary manner. - Sanitizer available in Sani-buckets, labeled properly and wiping cloths were being stored in the solution. QUAT 200-400 ppm detected in sanitizer buckets. - Floor observed clean and free of food debris. - General sanitation is satisfactory. - Mop sink maintained. Customer washroom maintained. No sign of pest activity noted at this date. Staff are food safe trained.
