Observation: -Several food items were left uncovered in the coolers, bulk storage bins were missing lids
- Scoops and single use bowls left in the bulk bins
Corrective Action(s): - Keep all food items covered with well fitting lids in cooler. Cover all bulk bins.
- Use scoops with handles and store scopes in a way that the handle does not come in contact with the food

- Routine inspection is conducted:
- Handsink at three compartment sink and washroom is supplied with hot and cold running water, liquid soap and paper towel
- All coolers - upright storage coolers and prep cooler are less than 4C. Thermometers are available in all coolers
- Freezer units are less than -18C
- Hot holding unit of rice is measured at greater than 60C
- Rice and noodles were being cooled at the time of inspection, reviewed the cooling steps. Ensure that hot foods are cooled from 60C to 20 C within 2 hours and from 20C to 4C within 4 hours
- Sanitizer solution in bucket was measured at 200ppm chlorine solution
- High temperature dishwasher is measured at 72C during final rinse cycle at dish level
- No evidence of pest activity is noted at the time of inspection
