Observation (CORRECTED DURING INSPECTION): Peanut sauce observed at room temperature.
Corrective Action(s): As discussed, after lunch/dinner rush, move the sauce into the cooler.

Observation (CORRECTED DURING INSPECTION): Wiping cloth solution in the back of house (BOH) did not have any sanitizer in it.
Corrective Action(s): Ensure wiping cloths are fully emersed in the water/bleach solution and that the bleach concentration is 200ppm.

Observation: One of the pieces on the meat slicer that directly contacts the food being sliced has several cracks on it.

Comments

General Comments:
Hand sinks are fully equipped.
All freezers are -18 Degrees Celsius or lower.
All coolers are 4 degrees Celsius or lower. Sprouts are being stored inside the cooler under the POS station again, but the cooler temperature is 4 degC so this is acceptable.
Rice is being hotheld above 60 degC
Wiping cloths are stored in 200ppm bleach solution at FOH.
Dishwasher rinse is 74 degC at plate level.
Operator has FS level 1 or equivalent certification (Expiry Jan. 1, 2027)
Temperature logs are being maintained
Exhaust hood has been serviced. Next service date isn't until September.
Stock noted being cooked on the stove in a large stock pot. Discussed cook/cool procedures. Operator indicated that the stock is portioned into smaller containers before being placed inside the cooler for cooling.
Pest control company is on contract. Last service report reviewed. KEEP FRONT DOOR CLOSED TO PREVENT PEST ENTRY INTO THE PREMISES.
Sanitation and operating procedures have improved compared to previous inspections. Keep this up.
