Comments

Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Operator was observed washing his hands and changing the single-use gloves after cash transactions and prior to food handling.
Prep. cooler in the back kitchen area was at or below 4 degrees C.
Thermometers were available inside both prep. coolers.
Upright freezer and both chest freezer temperatures were satisfactory.
Hot-held rice and miso soup were at or above 60 degrees C.
Sushi rice pH was below 4.2.
100 ppm chlorine sanitizer was available inside two spray bottles.
Dishwasher final rinse temperature was at or above 71 degrees C (measured at 79 degrees C) at the plate level.
Dishwasher final rinse temperature was at or above 82 degrees C for at least 10 seconds at the manifold level.
Ice machine was not in use.
No signs of pest activity were evident at the time of inspection.
Operator on shift held valid FOODSAFE level 1 course training (expiration date: August 19, 2024).
Permit to operate was posted in a conspicuous location.
