Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer not cleaned/disinfected after use. No sanitizer buckets in prep area - too many cloth towels noted. Utensils being stored in a sanitizer on the prep lines.
Correction: Meats slicer is required to be cleaned disinfected after use. Wiping cloths, used on food contact surfaces, must be stored in a sanitizer at all times. Utensils are not permitted to be stored in a sanitizer on the prep lines.

Reinspection based on previous inspection report.

- Food Storage: Ensure all food/ingredients are being stored in covered, food grade containers.
- Mechanical Dishwashing/Meat slicer - cleaning and disinfection: Ensure all food contact surfaces are cleaned and disinfected after use (ie: Meat Slicer) orr on a timely manner. (3 hours) Utensils are not permitted to be stored in a sanitizer - as discussed.
- Pest Control: Ongoing. Pest Control reports reviewed this date. Certified company is currently providing on site surfaces. Ensure recommendations are being reviewed and followed by the certified company. Increased sanitation is part of an effective pest control program. Ensure facility is being kept clean and organized. Cleaning of "hard to reach" areas is to be conducted routinely. (ie: below/under equipment)
- Sanitation: Improvements noted.
