Observation: Flooring in the back kitchen prep area has worn down to the raw concrete.
Corrective Action(s): Flooring must be sealed so that it is impervious, easily cleanable and durable. Flooring has been an ongoing issue in the back area.

Hand wash station were adequately maintained.
Bleach sanitizer measured >200 ppm.
All coolers were meeting health requirement.
Freezers were at -22 deg C.
High temp. dishwasher reached 73.7 deg C at plate surface.
Glassware washer had 12.5 ppm Iodine residual.
All food items in the walk-in cooler and back storage area were protected from contamination.
Staff wearing clean uniform and hair restraint.
General sanitation was good. (Ensure to wipe down inside the pizza prep cooler.)
Fume hood vents are overdue for servicing.
Note: Temperature log was missing at time of inspection. Ensure temp. log is kept on-site at all times.
