Observation: Interior of ice machine observed with brown organic debris. Long standing debris observed on outer machine where lid closes.
Corrective Action(s): Discard all ice in the machine. Do not use ice. Clean and sanitize the machine inside and outside to remove all organic debris to prevent cross contamination. Date to be completed by: immediately.

Observation: 1. Long standing debris observed in gaskets of sushi cooler and sandwich cooler in kitchen area.
2. Long standing debris observed behind the sushi cooler on the floor.
Corrective Action(s): Clean and remove all long standing debris to maintain the premises in sanitary condition. Date to be completed by: next inspection.

Observation: Silver tape observed lining the cupboards in the kitchen area.
Corrective Action(s): Tape is not durable, nontoxic, and easy to clean. Remove all tape and repair areas with a material that is smooth, nontoxic, durable, and easy to clean. Date to be completed by: Next routine inspection (6 months).

Observation: Bottle of sanitizer solution mixed with liquid dishsoap. CORRECTED DURING INSPECTION - other bottles at facility. Item dumped.

Correction: Ensure staff are aware sanitizer solution is to be made with 1/2 teaspoon bleach per 1 litre of water.

- All refrigeration units holding 4 C or below
- Freezers holding -18 C or colder
- Hot holding units at 60 C or higher
- High temperature dishwasher achieving 72.1 C
- No signs of pests
- No sushi rice prepared during inspection
- FoodSafe certified staff present
- Chemicals observed stored separately from food
- Light covers in place
- Permit visible
- Chlorine sanitizer in preparation area at 100 ppm
- Staff wearing hair restraints
- Raw food stored below all ready to eat foods in refrigeration units
