Observation (CORRECTED DURING INSPECTION): -Again observed overly packed shredded cabbage touching the top of the undercounter shelf. This was noted in the previous routine inspection -Correction Order issued -Final Warning

-Hydrated bamboo shoots have been sitting in a water bath since last night as per operator -temperature internal was at 14 deg C
Corrective Action(s): -Discarded the top layer of the shredded cabbage. The top of the shelf is not a regularly cleaned and sanitized area

-Discarded the hydrated bamboo shoots. Once dry goods are hydrated such as these bamboo shoots they must be kept refrigerated or cooked immediately (similar to hydrated rice, noodles)

203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Approximately 30 hanging slabs of cooked preserved pork from lip of the exhaust hood observed at time of inspection (~1115am). The preserved pork have been cooling there since last night -internal temperature 16 deg C
Corrective Action(s): Discarded the preserved pork.
Improper cooling -operator to suspend the sale of this menu item and submit Food Safety Plan for review

Observation (CORRECTED DURING INSPECTION): Again observed potentially hazardous food stored above the fill-line in the kitchen preparation cooler. Multiple foods temperature checked at >10 deg C: cut carrots, eggs, tofu, cut vegetables

This was noted in the previous routine inspection: Correction Order issued -last warning
Corrective Action(s): Discarded the cut carrots, eggs, tofu, cut vegetables.

Do not store foods above the fill-line of the preparation cooler: the 2nd indented line in the inserts

Observation: Some parts of the back kitchen flooring have come apart:
-roughened concrete exposed and some tiles broken/missing in front of the dishwasher and preparation cooler
Corrective Action(s): Floor must be smooth, non-absorbent, easily cleanable
