Observation: -Three open cans of metal - coconut milk, condensed milk and sweet corn - with food in it were stored in the cooler
- Several food items were left uncovered inside upright storage cooler
Corrective Action(s): - All three cans were discarded.Transfer the content of metal cans once opened to food grade containers
- Keep all food containers covered inside the cooler

- Handwashing stations in kitchen back area, bar area are supplied with hot and cold running water, soap and paper towel.
- High temperature dishwasher measured at 71C at the dish surface during final rinse. NOTE: Run several cycles before you run dirty dishes through dishwasher. Ensure that the temperature at the gauge is 82C
- Glass washer dispensed 50ppm chlorine during final rinse cycle.
- Quats sanitizer in spray bottle is measured at 200ppm quats concentration and chlorine sanitizer solution in bucket is measured at 100ppm residual concentration
- All coolers - walk-in cooler, 2 upright glass coolers, prep-cooler and bar cooler are measured at less than 4C.
- Walk-in freezer is measured at -21C.
- Hot holding unit for sauce and rice is measured at greater than 60C.
- Foodsafe certified staff is present on site
