Observation (CORRECTED DURING INSPECTION): Cooked rice in plastic container that was put inside the metal insert of the hot holding unit. Rice was 25C internally. Owner stated that this rice would have been cooked first thing this morning which is >5 hours ago.
Corrective Action(s): Discard rice and ensure that all rice kept in the hot holding unit is kept directly in the metal container. Product voluntarily discarded during inspection.

√ High temperature dishwasher not in use during inspection, owner stated that due to low volume it is not used at the moment but the three compartment sink is used for the time being.
√ General sanitation and maintenance is satisfactory
√ No signs of pest infestation noted
