Observation (CORRECTED DURING INSPECTION): Strawberry paste at approximately 43F and cream cheese at 41F according to operator's thermometer. EHO internally probed cream cheese, which was at 5C (41F).
Corrective Action(s): Strawberry paste and cream cheese were moved to the bottom compartment where it can maintain 4C or less. As instructed from last inspection, all foods should be in bottom compartment until EHO has verified that cooler can adequately maintain 4C or less.

Follow-up to routine conducted on Oct 4, 2018 (RPT#: JMAA-B58TET).

- Prep cooler temperature still elevated at 5C even after lid has been closed for 20-30 minutes. As instructed before, place all cream cheeses and foods in lower compartment until a follow-up inspection has verified that the upper compartment can maintain 4C / 40F or less
- Operator unable to show temperature log for today (presumably due to a system error)

A follow-up will be conducted to ensure that sanitary issues discussed in previous report have been addressed, and that the prep cooler is at 4C or less.

(It is not sufficient to say that the prep cooler can maintain 4C or less at the beginning of the day. It is understandable if the temperature elevates above 4C for a brief period of time due to the lid opening and closing during busy hours; however, it should return to 4C or less within a reasonable period of time after the lid has been closed (e.g. 20-30 minutes).
