Observation (CORRECTED DURING INSPECTION): < 10 PPM chlorine residaul detected in the sanitizer spray bottle in the sushi area at the start of the inspection.
Corrective Action(s): Operator refill the sanitizer solution. 200 PPM chlorine residual was detected after the sanitizer was refilled.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): No soap noted by two of the handwash stations (by sushi area and back prep area) during the inspection.
Corrective Action(s): **Issue corrected at the time of inspection** Operator brought out soap for the handwash stations. Operator must ensure that all handwash stations are accessible, equipped with hot and cold running water, liquid soap and paper towel at all time.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Two light fixtures noted with no light covers.
2. Improper dispenser (bowl with no handle) noted stored within and used as a dispenser for bulk tempura bread crumbs.
3. Partially cooked shrimp tempura were stored in cardboard boxes in one of the reach-in coolers in the sushi area.
Corrective Action(s): 1. Please do one of the following:
- Purchase light covers for the missing fixtures
- Purchase individual light bulb sleeves or
- Change out the exposed light bulbs with LED lights
Operator must ensure that exposed light bulbs are protected or switched out to break resistant bulbs in the event that the light bulbs burst or shatter that may lead to physical contaminants to food.
2. Remove the bowl and replace with a proper dispenser with handle. Store in a manner where the handle do not come in contact with food.
3. Remove the cardboard and store the prawn tempura in a food grade container. All cooked and ready-to-eat food must be stored in a food grade container that can be washed and sanitized.

Observation (CORRECTED DURING INSPECTION): Cardboard noted being used as liner on the shelf below the prep table by the 2-compartment sink area.
Corrective Action(s): Operator removed and discarded the cardboard.
Do not use cardboard as a liner in the facility as it cannot be easily cleanable and sanitize.

All freezer units were at -18.0C or below.
Hot hold unit for miso soup was noted at over 60.0C.
Sushi rice noted with a pH of 4.0.
High temperature dish machine was able to reach 71.0C at the plate level during the rinse cycle.
Proper thawing was observed - under cold running water.
No signs of pest activities noted during the inspection.
General cleanliness and organization satisfactory.
