Observation (CORRECTED DURING INSPECTION): Chopped mushroom and cilantro observed to be stored under room temperature.
Corrective Action(s): Discard aforementioned items. All potentially hazardous foods must be stored under a cooling unit able to hold an air ambient temperature of 4C or lower.

Observation (CORRECTED DURING INSPECTION): Operator informed that in-use utensils (tongs, knives, etc.) are washed and sanitized twice daily. Observed can opener blade to have built-up of debris.
Corrective Action(s): Wash and sanitize aforementioned items. All in-use utensils must be washed and sanitzed every 4 hours. Can opener must be washed and sanitzed after each-use.

Observation (CORRECTED DURING INSPECTION): No available chlorine sanitizer spray bottle or bucket available to sanitize food contact surfaces. Operator informed that they wash kitchen equipment with soap and water only.
Corrective Action(s): Prepare chlorine sanitizer bucket/spray bottle to measure 100-200ppm. Ensure all kitchen equipment must be washed and sanitized using 3-compartment sink method (i.e.: wash/rinse/sanitize/air dry). 3rd compartment sink must be diluted to achieve 100-200ppm chlorine at 1:500 dilution of bleach to water.

Routine Inspection conducted today.

Prep cooler and walk-in cooler measured at 4C. Chest freezer and Stand-up freezer measured at -18C. No hot-holding at the time of inspection.
3-compartment sink available for ware washing. Bleach available.

NOTE: No cooking on potable stove range. Facility is not approved to cook over a stove range as there is no exhausthood present above potable stove range.
