306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Rodent droppings have not been cleaned in the following areas: - Cupboard in wait station under hand sink - Cupboard in front grill line area Spill observed under bottle waste container under dishwashing area. This waste accumulation attracts pests. . Corrective Action(s): Remove all dishes and equipment from lower shelves until rodent infestation is eliminated. Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area. . Violation Score: 15

Follow up inspection the result of ongoing rodent infestation. - Construction team on site during inspection to seal holes in facility - All items have been removed from lower shelves including under dishwashing area, prep area, grill line and wait station - Lack of rodent droppings observed in prep area today ITEMS TO COMPLETE: - Back fire door to be repaired/replaced to ensure tight fit to prevent against the entry of pests - Continue to sanitize bottom shelves each morning prior to start of food preparation - Continue to store food and food equipment items away from lower shelves until such time as rodent infestation has been eliminated - Continue to employ services of Pest Control company and ensure recommendations are followed. At each service ensure a member of the Management team discusses results of inspection with Pest Technician.
