Observation: Trays of cooked chicken were being double stacked inside the prep without lids/covers in between.
Corrective Action(s): Cover foods with lids before storing in them in the cooler. Do not double stack trays of food without covers/lids in between them.

Observation: Some frozen foods were being thawed at room temperature.

Comments

General Comments:
Hand sinks are fully equipped. DON'T DILUTE THE SOAP IN THE MEN'S WASHROOM.
All freezers are -18 Degrees Celsius or lower.
All coolers are 4 degrees Celsius or lower. Sprouts are being stored inside the cooler under the POS station again, but the cooler temperature is 4 degC so this is acceptable.
Rice is being hotheld above 60 degC
Wiping cloths are stored in 200ppm bleach solution at FOH.
Dishwasher rinse is 74 degC at plate level.
Operator has FS level 1 or equivalent certification (Expiry Jan. 1, 2027)
Temperature logs are being maintained
Exhaust hood has been serviced. Next service date isn't until March 2024.
Broth noted being stored at room temperature. Temperature of the broth was 70 degC. Discussed cooling procedures. No concerns noted.
Pest control company is on contract. Last service report (Nov.) reviewed.
