Corrective Action(s): Clean all racks and all other surfaces with mold on them in the walk in cooler. Discard any moldy onions or other produce.

√ Cooling reviewed, no concerns with process noted. Cones of meat are finished cooking within 3 hours then any leftovers are cooled and taken out to be reheated when needed
√ Food up off floor ≥6”, good stock rotation noted
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Bleach sanitizer available at 100ppm
√ Three compartment sink stocked with soap, hot and cold running water and sanitizer
√ Equipment appeared to be in good working order
