- Handwashing sinks equipped with hot and cold running water, liquid soap and paper towel
- Food in hot holding unit maintained at 60C or hotter
- Walk-in freezer at -18C
- Freezer #2 on defrost cycle. Checked temperature logs, no concerns noted. Ensure temperature reaches -18C after defrost cycle completed
- Coolers are at 4C or colder
- High temperature dishwasher final rinse temperature reached 72C (minimum required is 71C) at the plate's surface
- Observed employees with good hygiene practices (washing hands before serving)
- Sanitizing solution measured at 200ppm QUATs residual.
