Observation (CORRECTED DURING INSPECTION): - Raw eggs used as an ingredient in greek dressing with no cook/heat step
(Ingredients: Raw eggs, oil, oregano, hot sauce, vinegar, spices)
Corrective Action(s): - Immediately discontinue the use of raw eggs in dressing. Use pasteurized egg product.
- Discard all prepared greek dressing. Completed by staff at time of inspection.

Comments

- Handsinks were supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder:
- Walk-in cooler 4C
- Line cooler 3C
- Beverage cooler 0C
- Freezers maintaining product in a frozen state
- 2 door reach in freezer -16C
- Single door freezer -15C
- Food in steam table maintained at >60C. Cooked rice 71C, Potatoes 76C
- Food in coolers and freezers were wrapped/cover with a few exceptions which were addressed at time of the inspection.
- Dishwasher operational and dispensing adequate chlorine solution to sanitize dishes. 100ppm chorine detected on dish after cycle.
- In use wiping cloths kept in 200ppm chlorine sanitizer solution for use on counters and food contact surfaces
- Foodsafe requirement met at time of inspection
- Rodent (mouse) activity appears to be controlled with the control measures which were taken after previous routine inspection. Regular pest control service in place. Continue to maintain a high level of sanitation and continue to monitor for any further rodent activity. Ensure that if any rodent droppings are observed, they cleaned up promptly and the areas sanitized.
