- No premade rolls at room temperature noted at time of inspection.
- Hot holding of various types of tempura in hot holding unit 68C
- Sanitizer readily available in each food preparation area (back food prep counters, sushi bar area, drink area...etc). A few cloths noted on counters - reminded staff to keep all wiping cloths stored in sanitizer solution when not in use.
- Proper scoop for ice is stored in a holder secured to the inside of the ice machine.
- All cardboard and tin foil has been removed from surfaces
- Required cleaning has been completed. No sign of pest activity. Continue to maintain a high level of sanitation.
