Observation (CORRECTED DURING INSPECTION): The cooler in the sushi prep area was at 11C. The internal temperature of fish (salmon, tuna, shrimp etc) that have been stored in the cooler were at 7~9C. The operator indicated that the fish had been moved from the freezer to the cooler last night.
Corrective Action(s): The operator was directed to discard all fish that measured >4C at the time of inspection. The operator shall monitor the cooler temperature with a working thermometer and have it adjusted or repaired immediately. The cooler shall be at or below 4C (40F) at all times.

- Handsinks maintained appropriately with hot & cold running water, liquid soap and paper towel
- 100ppm chlorine sanitizer bottles present
- Temperatures of refrigeration units other than the one indicated above were adequate (<4 for coolers and <-18C for freezers)
- High temp dishwasher achieved adequate sanitizing temperature at plate's surface (78C)
- Fish tank is maintained in a sanitary manner
- General sanitation is adequate
- No signs of pest infestation
