209 - Food not protected from contamination [s. 12(a)]
Observation: 1. Two bowls of batter were found uncovered in the walk-in cooler. Bacon slices were left uncovered in the bar area.
2. Light over the frying area (underneath fume hood) was missing light cover.
3. Ice scoop was stored directly on ice in the bar.
Corrective Action(s): 1. Ensure all food items are covered to protect from contamination.
2. Install light cover where it is missing in the fume hood.
3. Store ice scoop in a clean and santized container.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Fume hood vents (ones that can be pulled out) have grease build up. Ceiling tiles and light covers above the cooking/prep area have debris build up. Equipment (line coolers - inside and outside) have food debris build up, stain and grease build up as well as dishwashing area stainless steel table and back splash.
Corrective Action(s): Clean these items and areas thoroughly and keep to a regular cleaning schedule to avoid heavy build up.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Cooler drawers in the kitchen area has water pooling underneath the bottom drawer.
2. Wine/beer cooler in the bar area has water pooling on the bottom and temperature was at 12- 15 deg C. Uncovered portions of salsa was found in this cooler. No other potentially hazardous foods were found.
3. Glassware washer did not have chlorine residual at the plate surface.
Corrective Action(s): 1. Drain pooling water underneath the bottom drawer and clean thoroughly. Sanitizer with bleach to get rid of mold created by heavy moisture. Repair this equipment so that it drains properly.
2. Drain pooling water underneath the wine/beer cooler and sanitize thoroughly. Salsa portions were discarded at time of inspection. Do not store any perishable food items in this cooler. This equipment requires servicing.
3. Service the glass ware washer. Chlorine residual of 50 ppm or greater is required at the plate surface. For the mean time, all glass wares to be washed in the main kitchen dishwasher until equiment is repaired.

Comments

Hand wash stations provided with liquid soap and paper towels.
Sanitizer chlorine measured 100 ppm in buckets and spray bottles.
Cold holding and freezing temperatures were meeting health requirements. No hot holding at time of visit.
Temperature log was available and up to date.
Active pest control in place. Most current pest report was dated April 2019.
No signs of droppings or pests noted at time of visit.
Washrooms were sanitary and provided with sanitary facilities.
Note: Overall sanitation is improving and kitchen area requires the most attention.
Following Sanitation Plan and cleaning schedule will keep the premises cleaner and prevents build up as well as pest issues.
