Observation: Main kitchen and oyster station cutting boards stained with embedded food residue.
Basement walk-in cooler cooling unit fan covers have debris accumulations as well as surfaces; pooling liquid on the floor, a combination of thawed condensation and a possible walk-in cooler condensation drain issue. Ice droplets observed on the bottem of cooling unit of walk-in cooler.
Main kitchen walk-in cooler shelves and cooling unit covers have debris accumulations.
Cooler door gaskets have food debris accumulations
Corrective Action(s): Scrap surfaces of cutting boards to remove embedded material, wash and sanitize. Replace cutting boards if they cannot be maintained.
Clean walk-in coolers and disinfect.
Basement walk-in cooler pooling water issue to be resolved, pooling water with organics in a highly perishable food (oysters)environment is a concern.
Clean cooler door gaskets.
