Observation: Refrigerated meat department room at ambient air temperature of 11C to 12C. Assistant Manager on duty instructed staff to keep back door closed to prevent cold air loss.
Corrective Action(s): Keep back door closed and have the fans in the room serviced if needed to ensure the ambient air temperature of the meat processing room is able to be maintained at 10C or less.

Comments

Good general sanitation. No obvious signs of pest activity.
Hand wash stations had soap, paper towel, hot and cold running water.
All coolers (display, walk in...etc) were at 4C or less
All freezer less than -18C
Adequate separation noted in the meat and seafood areas
Quats at source and in spray bottles 200ppm. Test strips available.
Manual ware washing procedures reviewed with staff - no concerns with procedures explained at time of inspection.
