Observation (CORRECTED DURING INSPECTION): Cooked chicken, raw meats, raw shrimps, butter chicken sauce, cooked potato and various cut vegetables stored in the prep cooler were measured with an internal temperature of 12C. Operator stated all proteins were stored here for less than 4 hours.
Corrective Action(s): Cooked potatoes were discarded. Move all other potentially hazardous food items into the walk-in cooler.

Observation: Dried food debris noted on the vegetable presser.
Corrective Action(s): Clean and sanitize the vegetable presser properly. Take it apart when cleaning and sanitizing. Correct by: Immediately.

Observation: 1. Plastic bowls were used as a scoop for scooping out cooked rice and potato at the prep cooler. Bowls were left in inserts in direct contact with the food.
2. Peeled potatoes were soaked at one of the compartment at the compartment sink for dishwashing. Dirty dishes were piled beside the soaked potatoes.
Corrective Action(s): 1. Do not use plastic bowls for scooping out the food and they must not be left in direct contact with the food. Discard the bowls immediately.
2. 3 compartment sink is used for dishwashing and must not be used for food preparation. Soak the potatoes in food grade buckets. Correct by: immediately.

Observation: Prep cooler measured with an ambient air temperature of 13C. 4C is required to properly hold cold potentially hazardous food.
