Observation (CORRECTED DURING INSPECTION): Meat deli cooler observed at 8 to 9 C. Checked again later in inspection at 6.5 to 7.5 C. Possible defrost cycle. Discussed with operator. New compressors and unit overhaul scheduled for February.
Temp logs in place. Dating these sheets inconsisitent. Closely monitor this unit for temperatures and make sure it stays in proper range.
Corrective Action(s): Make sure to date temp logs on daily basis.
Make sure to monitor meat case closely and ensure foods stay at proper temps.
Many of the ready to eat foods are put into unit frozen.
Check up in February.

Observation: Wired shelves in walk-in cooler rusted and impossible to clean properly. Noted unchanged from previous inspection.
Corrective Action(s): Begin the replacement process for the rusted shelves. Choose the worst first and replace accordingly. Handshake.

Comments

Ceiling painted and fixed up. Black, but overall lighting in premises is good.
Operator plans to redo the cabinets in deli and meat section, and to add stainless steel surrounding dishsinks.
Cooling units (minus meat display) noted below 4 C.
Freezers below -18 C.

Note: Clean up the meat shelves floor and wall as discussed.
Operator promised to begin replacing shelves in walk-in cooler.

General cleaning and organization is quite good at time of inspection.
