Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottles and sanitizer pails in the back kitchen area and front service area were empty of sanitizer.
Corrective Action(s): Operator setup 100 ppm chlorine sanitizer in two sanitizer pails to sanitize preparation surfaces. Ensure 100 ppm chlorine sanitizer is available to sanitize preparation surfaces during all hours of operation.

Observation (CORRECTED DURING INSPECTION): Handsink in the back area was not conveniently accessible as it was partially blocked by a table.
Corrective Action(s): Ensure there is enough clearance space around handsinks so that they are conveniently accessible for handwashing. Operator re-located the table so that it did not obstruct the handsink.

Observation (CORRECTED DURING INSPECTION): 1. Raw meat was observed on a higher shelving unit than potential ready-to-eat food (lettuce, cucumber, and lemons).

2. Ice scoop was observed to be stored in the ice machine with the handle in contact with ice.

Corrective Action(s): 1. Ensure to store raw meat on the lowest shelving unit in the walk-in-cooler separately from ready-to-eat food products to protect ready-to-eat food products from any potential contamination.

Ready-to-eat food and raw meat were stored in covered containers, and raw meat juices were not observed to be dripping over ready-to-eat food products. Operator re-arranged to the food products to store raw meat on the lowest shelving unit separately from the potential ready-to-eat food products in the walk-in-cooler.

2. Ensure to store the ice scoop either on a clean surface or clean container separately from the ice to protect the ice from any potential contamination. Operator removed the ice scoop from the ice machine, and placed it on a clean stainless steel table-top surface during the inspection.

Observation: Light bulb in the walk-in-cooler lacked a shatter-resistant cover over it.
Corrective Action(s): Ensure to install a shatter-resistant cover over the light bulb in the walk-in-cooler to prevent any potential physical contamination to food in the event of incidental breakage of the light bulb; Correct within 1 month.

Comments

-Both handsinks (in the front service area and back area) were supplied with liquid soap, hot and cold running water, and single-use paper towels.
-Walk-in-cooler and other refrigeration units were at 4 degrees C or less.
-Chest freezer was at -18 degrees C or less.
-Hot-held food was at least 60 degrees C internal temperature.
-Food was covered in food grade materials in the walk-in-cooler.
-3-compartment sink was setup properly to facilitate proper manual ware-washing: first compartment sink was filled with clean soapy water and third compartment sink unit contained 100 ppm chlorine sanitizer. Only single-service utensils are used.
-Ventilation hood was in a clean condition.
-Ice machine was in a clean condition.
-Pest control program was in place via Terminix (the mall) on a weekly basis.
-Permit to operate was posted in a conspicuous location.
-Operator on duty held valid FOODSAFE Level 1 course training (expiration date: February 15, 2026).

Stock Room:
-Upright freezer was at -18 degrees C or less.
-Chest freezer was at -18 degrees C or less.
- Upright double-door cooler in the stock room was empty of food stock, and not in use. If this cooler is to be used in the future, ensure to monitor and maintain it at 4 degrees C or less prior to stocking it with potentially hazardous food.
-Dry goods were stored off the floor.
