209 - Food not protected from contamination [s. 12(a)]
Observation: A) Ice machine observed mouldy on the inside.
B) Machine is also leaking and water observed ponding on the floor. Observed infiltrating to the mop sink area.
C) Floor and corner of wall below machine suffering accumulations of filth and debris plus wall is deteriorating.
Corrective Action(s): A) Clean and sanitize inside of ice machine by follow-up inspection date noted on report.
B) Eliminate leak. Wall needs repair. Move machine to complete this work.
C) Completely clean noted area by follow-up inspection date noted.

304 - Premises not free of pests [s. 26(a)]
Observation: Significant fly and drain fly infestation, mostly accumulating around the dirty cloths, but likely breeding and finding harbourage in perpetually damp areas of premises and especially where the water stagnates.
Corrective Action(s): Eliminate noted infestation problem in premises. Actions taken will be reviewed at follow-up inspection date noted on report.
**Make changes to dirty linen storage such that the flies are kept away and proper removal from premises can take place in a sanitary manner.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Many areas of the premises observed not adequately cleaned and maintained. These include:
- Soy sause containers in back of premises (pest attractant);
- Grill area of kitchen (left side, right side and floor);
- Walk-in cooler floor (blood on floor);
- behind and under bin freezer;
- Bar area at dish collection area (keep all boxes in this area off floor);
- Area of dry food bins;

Corrective Action(s): Above noted areas require a thorough cleaning and cleaning schedule must be maintained (every 4 to 6 months in NOT acceptable). This must be done by follow up inspection date noted on report.

Reduce on-hand volumes of food for 'rush' purposes and discard after 'rush' (noodles, pre-fried food, etc.).
Recommend defrosting upright freezer take place soon.
Adjust the storage of raw meats away from ready to eat vegetables in the walk-in cooler.

Dishwasher working and chlorine measured at 50 ppm.
