Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Sanitizer bucket noted 0 ppm chlorine. Had not been replenished since the day before.
Correction: Ensure sanitizer is maintained at 100 ppm chlorine with wiping cloths stored in solution. Do no leave wiping cloths on counter.
Comments

- Mouse droppings have been removed and surfaces sanitized
- Service report from Pest Control Technician was available for review at the time of the inspection. Snap traps and tin cats were placed and entrance points closed.
- Continue to monitor for any additional rodent activity and ensure droppings are cleaned up promptly.
- Areas outlined in previous report have been cleaned. Ensure this level of sanitation is maintained.
- Wooden chopping block table with worn surface was removed from premises and replacement put in its place.
