Temperature logs need to be implemented for next inspection. Discussed with new chef as previous chef retired. Agreed to make a priority.
**Recommend timers for large scale cooling processes (chicken breasts, meat dishes, etc.) as a tool to avoid excessive exposure to room temperature cooling.
**New grill drawer cooler installed along cook line. Very Good!!
Coolers in kitchen including walk-ins all below 4 C.
Freezers below -18 C.

Recommended to staff to clean dolly by dishwasher. Done immediately. Thank you!
General sanitation pretty good - a couple of isolated spots behind wheels of food equipment with food debris build-up. Discussed with operator.
