Observation:
The high temperature dishwasher had rinse cycle temperature of 66.6C at the plate's surface as per max/min thermometer. The temperature shall be at least 71C or greater (or 82C at the manifold) at the plate's surface to kill germs. During the inspection, the owner increased the booster's temperature, but it still was 66C during the rinse cycle.
Corrective Action(s):
Immediately call a repair person to increase the rinse cycle temperature so it reaches 71C at the plate's surface (82C at the manifold). Manually sanitize dishes by using a bleach and hot water soak (add 1 Tablespoon of bleach to 4 Litres of hot water), after washing. Use the 3-compartment sink method. During the inspection, the owner called a repair person who will be arriving later this evening to look at the machine.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezers were -12C or colder; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is good.
- No signs of pests.
- FoodSafe certified staff present.
- All foods stored in food grade containers; date coded; labeled; covered; and stored 6" off the floor.
- No expired foods in use or for sale.
- Single-use, sample spoons used to dispense product.
- Each flavor has its own spoon to prevent cross contamination and for food quality.
