Observation (CORRECTED DURING INSPECTION): Hand wash station next to the stove was covered with a cutting board. This was moved during inspection.
Corrective Action(s): Keep this clear at all times to ensure that everyone can wash their hands when they need to.

209 - Food not protected from contamination [s. 12(a)]
Observation: Back staff washroom is being used for dry storage of food.Note that staff stated that they do use this bathroom. Food cannot be stored in the same space as a working bathroom. Note: the taps at the sink have been removed so no working hand wash station is in bathroom.
Corrective Action(s): Two options:
1) Move all food out of this space, fix the sink so staff can wash hands at the sink in the bathroom. Or
2) Turn off the toilet, remove toilet paper and have all staff use the customer washroom.

304 - Premises not free of pests [s. 26(a)]
Observation: Observed mouse droppings at the back of the cupboard used for storage of knives and other kitchen utensils.
Corrective Action(s): Remove all knives and all other items from the all these shelves, rewash and sanitize all of these items. Clean all of the shelves, removing all droppings and sanitize shelves. Also plug any holes with something that mice cannot chew through or move (example: steel wool). Due: Friday February 10, 2023

Note: For any food that is kept out at room temperature, it must have a time written on it for when to throw it away or use a timer. Food can only be kept out at room temperature after it cools to less than 60C for 2 hours.

General observations:

√ Food up off floor ≥6”, good stock rotation noted, raw meats stored below or separate from ready to eat foods
√ Hand wash station fully stocked with hot and cold running water, liquid soap and paper towel

√ High temperature dishwasher sanitizing at ≥71°C
√ Two compartment sink stocked with liquid soap and sanitizer
√ Equipment appeared to be in good working order
