Observation (CORRECTED DURING INSPECTION): Internal temperature of food items in the pizza prep cooler ranged from 9C to 10C. Food items have been in the cooler unit for approximately 3 hours.
Corrective Action(s): Cold potentially hazardous foods are to be stored at 4C or less to prevent the growth of pathogens and or the formation of toxins. Food items were relocated to the walk-in cooler (4C) and upright cooler (4C).

Comments

-Follow-up inspection to May 9, 2016.
-General food storage practices were good at the time of inspection. Scoops were stored in a sanitary manner and foods were stored in food grade materials.
-Areas affected by rodent droppings have been cleaned and sanitized. Did not see any evidence of recent pest infestation.
-Cardboard lining shelving units has been removed.
-Chemical spray bottles have been properly labelled. Ensure bottles are relabelled once the labels fall off.
