Observation: Most of the kitchen area is surprisingly free of drain/fruit flies, EXCEPT the area around the double prep sinks. Significant localized activity and harbourage in and around shop vac.
Corrective Action(s): The following actions should be taken to eliminate this problem:
- Re-locate shop vac to chemical room or to outside;
- Daily end-of-day cleaning is needed for shop vac, and the inner collection chamber should be left with a spraydown of detergent or sanitizer to deter fruit fly breeding;
- This area needs daily added end-of-day attention (shelves and floor) until breeding cycle broken;
- Vaccum up flies and bait the area as discussed until pest activity controlled.

Comments

- Linens and uniforms in change room beginning to pile up. Make sure the hampers are tied off and replaced before they overflow, making the job more difficult than necessary. This may attract pests if left unchecked.

- General sanitation and organization in premises continues to be much improved.

Cooling units less than 4 C
Freezers, and walk-in freezer less than -18 C. Walk-n freezer and cooler very clean. Good.
Sani-buckets and spray bottles with quats all at 200 ppm.
Dishwassher at 74 C at plate. OK.
Hand wash stations all stocked and in use.
