Observation: No paper towel at the handsink in the baking area.
Corrective Action(s): A part is missing for the dispenser machine and the paper towel is a rolling type with no tear lines & does not get easily torn up by hand. Ensure to immediately equip the sink with single use disposable paper towels. Fix the dispense unit as soon as possible.

Observation:
Open containers of chocolate and cocoa powder observed in the decoration room.
Open bags of dry ingredients observed in the back dry stroage shelves.

Observation: Notable amount of rodent dropping observed throughout the facility, especially in the back baking area.
Corrective Action(s): Ensure deep cleaning is done everyday to remove rodent droppings and sanitize the affected areas. Clean all the perimeters along the wall. Do not vacuum or sweep - use a wet wipe to collect all droppings. Ensure to wear approriate PPE (masks & gloves) while cleaning.

Observation (CORRECTED DURING INSPECTION):
Back door was left open in the bakery area & employee break room. Door screen in the break room has gaps at the bottom.
Corrective Action(s):
Ensure the doors are closed at all times to prevent pest entry. Install a door sweep in the break room door screen - there should be no sunlight seeping through. Do not have the outer door open until the door sweep is installed. Consider installing a well-fitting door screen for bakery area if it is intended to be left open for air flow.

Observation:
- Rodent droppings observed in the following areas: storage cupboads (where extracts are stored) inside the decoration room, along the wall perimeter in the baking area, in the proofer, in dry storage area, around hot water tank.
- Droppped food observed inside the walk-in freezer.
- Drawers with rolling pins, cookie cutters dusted with flour.
- Undercounter shelf of the work top.

Corrective Action(s):
Ensure the areas noted above get thoroughly cleaned. Ensure to clean & sanitize bakery tools right after use before storing them in the drawer.

Comments

All handsinks except the one in the back baking area are fully equipped with hot and cold running water, liquid soap in a dispenser and single use paper towels.
All coolers at 4C or below.
All freezers ranged from -10C to -15C.
Bleach sanitizer in a large bucket (for front) measured at 200ppm.
Biweekly pest control service by Premiere Pest Control. Follow recommendations cited in the report.

*Ensure there are spray bottles of bleach sanitizer for front, baking area, decoration area. Label all bottles stating "sanitizer".

Complaint regarding mice activity was discussed with the operator. Operator stated that the products in the affected case were discarded and the case was cleaned & disinfected after. No rodent was spotted at the time of inspection but the recent pest report from March 31, 2022 indicates that there are continued heavy rodent activity. Rodent can be controlled through ongoing monitoring and cleaning. Ensure cleaning of the floors and hard-to-reach places is done everyday. Keep doors closed. Don't store food in a open package.

A follow up inspection to be done on June 3, 2022 to ensure compliance.
