Observation (CORRECTED DURING INSPECTION): Found falafel at 10 C, stuffed vine leaves at 11 C, times placed in cooler at least 4 hours before inspection.
Corrective Action(s): Discard all potentially hazardous foods. Do not use until cooler has been repaired so it can maintain food at 4 C or colder at all times.

Observation: Found a knife on the knife magnet, mandoline on the drying rack, and pot in the back all with food still on them.

Corrective Action(s): Do not use disposable table clothes to cover prep cooler as it is not a washable surface, must use a proper lid for the refrigeration unit.

Observation: Prep cooler was sitting at 8 C, food inside was found to be 10 - 12 C.
Corrective Action(s): Have cooler repaired or replaced so can maintain 4 C or colder at all times. Do not over stock inside cooler once repaired.

- Hand sinks had liquid soap, paper towel, hot and cold water.
- 2 door upright cooler in back was 1 C
- 2 door pop cooler was 4 C
- 1 door pop cooler was 3 C
- Upright freezer was -13 C
- Deep freeze was -14 C
- Hot holding was 60 C or hotter
- Meats are grilled as secondary cook step after being cut then place in hot holding unit
- Spray bottles had 200 ppm chlorine bleach
- Dishwasher had a final rinse of 82 C at gauge and 74 C at plate
- No signs of pest activity noted during inspection
- General sanitation is satisfactory.

NOTE: if prep cooler is not big enough to hold all of the toppings for Donairs, purchase a new cooler and advise of where will be placing new cooler.
