Observation: General cleaning required.
Corrective Action(s): Clean the base of pizza prep area of the front prep cooler. Clean under the counters and dry storage shelf. Clean and sanitize the slicer.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The temperature inside the front prep cooler is 10 degC. No foods are being stored in the cooler. Operator moved the few items that were in there to the back walk-in cooler.
Corrective Action(s): Get the cooler fixed. Cooler must be able to maintain a temperature of 4 degC or below. Do not store foods in the cooler until it has been fixed.

Comments

-Walkin cooler's at 3 degC
-Upright freezer's at -19 degC
-No hotholding was being done during the inspection. Operator is not selling pizza by the slice.
-Hand sink's fully equipped
-200ppm Quats is available for use
-DW rinse has 50ppm chlorine. MONITOR THE SANITIZER BOTTLE TO ENSURE IT HASN'T RUN OUT.
