General sanitation was satisfactory.
2 small flies observed by the big iced Cappuccino machine. Manager stated pest control company Abell just did drain cleaning two days ago. Recommended manager to keep food processing area as cool as possible, clean spilled sweets as quick as possible.
High temperature dishwasher measured 71.9C at the dish level.
Walk in freezer -20.8C, walk in cooler -2.8C, sandwich cooler, under the counter cooler < 4C. Thermometers available.
Hot holding units >60C.
Quat sanitizer at 200ppm. 3-compartment sink was available for manual dishwashing.
Handwash stations are fully equipped with cold/hot running water, hand soap and paper towel.
Chemicals stored away from food in the mop room.
Digital temperature log up to date and available for review.
Frozen chicken thawed properly inside the walk in cooler.
No signs of rodent activity observed during the inspection. There was a hole at the bottom of the exit door, manager stated she tried to seal the hole while waiting for technician to fix it.
