Observation:
Accumulation of grease and food on the outside of food container; on the exterior sides of the stove; and inside the front freezer compartment (meats stored). The food and grease will attract pests.
Corrective Action(s):
Wash and sanitize the mentioned areas to remove the food and grease. Use hot water and soap every day, and then sanitize with bleach and water solution.

Observation:
Food and grease debris accumulated on the floor under and around the stove; on the walls of the kitchen; on exterior surface & stand of the dishwasher; on the floor along the base of walls in the kitchen and front cooking area; and on the floor on in the walk-in-cooler around shelf legs. This creates an environment which will attract pests.
Corrective Action(s):
Wash and sanitize the mentioned areas to remove the food and grease. Use hot water, soap and a scrub brush. Then sanitize with a hot water and bleach solution.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer -18C; hot holding units above 60C; and thermometers present.
- Spring rolls being held at 58C, but are discarded after 2 hours.
- Low temperature dishwasher had [Cl2] of 50-100ppm during the rinse cycle.
- Bleach sanitizer in spray bottle had [Cl2] of 100ppm.
- All foods stored in food grade containers; covered; stored in groups with proteins below/separate from other foods; and foods store 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust canopies have been professionally cleaned this month.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- No signs of pests.
- FoodSafe certified staff present.
- A new stove will be installed in 3-4 weeks.
- All the cooler and freezer units have been serviced, and replacement of some fans and compressors have been completed.
- COVID-19 mitigation measures in place. Hand sanitizer for customers; signs posted to use hand sanitizer and social distance; only 4 tables out of 8 tables in use for dine-in to accommodate social distancing; staff wear masks; and touchless payment accepted.
- Discussed the results of the inspection report with the owner, signature not obtained due to pandemic.

**Recommend that extra tongs and ladles are purchased for the buffet area, so staff have extra ones to put in the food inserts when the other ones are placed in the dishwasher. Wash the tongs and ladles (in the buffet area) every 2-4 hours.**

- A follow-up inspection will be conducted on July 17/20 to ensure cleaning of all mentioned areas has been completed.
